Seychellois Lobster Pizza Mahé Downtown

INGREDIENTS:
1 pizza dough (homemade or store-bought)
2 cloves garlic (minced)
2 tablespoons olive oil
1 cup shredded mozzarella cheese
1 cup freshly grated Italian fontina cheese
3 tablespoons freshly grated Parmesan cheese
1 1/2 cups chopped fresh raw lobster tail
1 cup of sliced smoked salmon
1/4 cup of capers
1 tablespoon fresh thyme leaves
1/2 teaspoon red pepper flakes
Lemon wedges (for serving)
INSTRUCTIONS:
Preheat oven to 450ºF
Hand-stretch the dough to form a circle.
Place on a well-floured onto a pizza pan.
Spread garlic - olive oil mixture over dough.
Combine cheeses & sprinkle 'em over the dough.
Arrange lobster evenly and sprinkle w/ thyme.
Bake in the oven for 20-25 minutes.
Remove from oven and serve with lemon wedges.
