Valencian Paella
Recipe
INGREDIENTS:
500g Rabbit
500g Chicken
100 ml Olive Oil
1 ripe Tomato
200g of green beans
500g Bomba Rice
1.5 lts. Chicken Stock
A sprig of fresh rosemary
1 pinch of Saffron
250 gr. Artichoke Hearts
INSTRUCTIONS:
1. Heat up the paella pan & add the oil. 2. Cut chicken & rabbit in small pieces.
3. Sauté the meat until it is seared.
4. Add tomatoes & vegetables.
5. Add the stock, & saffron.
6. once it boils, add the rice.
7. After 10 minutes, decrease the heat
8. Once all the liquid has evaporated.
9. Let it stand for a couple of minutes to let it form the socarrat (light crust of rice on the bottom of the pan.
10. Garnish w/ Eureka limes.
